Gir Cow Ghee is prepared using the traditional "Bilona" method. It is prepared from A2 milk obtained from Gir Gomata (Cow) using the ancient Indian practice of “dohan”. According to Shasta’s (ancient Indian treatises), dohan (derived from “do” meaning two) literally means the calf is allowed to feed to its satisfaction from two “anchals”, while the remaining two can be used to obtain milk for other living beings including humans. We never get rid of older non-lactating Gautama’s or Nandi's. Our Gomata's are reared unrestricted according to principles of nature, and left to grace on an organic field. We do not use modern artificial interventions to induce breeding or increase milk production. The Bilona process is used for making the purest and most natural ghee.

Understanding Bilona Ghee: What It Is and Its Benefits for Your Health:

Curious about what sets bilona ghee apart from other types of ghee made using cream?

As described in ancient Vedic scriptures, we use traditional Bilona method, to set the curd. Then, Hand-churn it to obtain superior-quality Makhkhan (Butter) & melt it to produce ghee. This results in an exquisite taste, delightful aroma, light in feel & a wholesome granular structure. The entire process, from Dohan (collection of Milk) to Production of ghee is strictly monitored in a controlled environment.

This means we use whole milk and not just cream. As a result, each liter of ghee requires 25-30 liters of milk, in contrast to conventional dairy ghee which is made from residual cream. The cooking is slower and wood-fired in a brass vessel. Such ghee is greatly emphasized in Ayurveda as a potent tonic and medicine. Slower flame retains most of the nutrients in the ghee in contrast to higher temperatures.

Purity of GIR Cow Breed:

The Gaushala has over 200+ Gaumatas (’Cow’ as Divine Mother) across 18 Gotra's (lineage) of Gir breed. These are not cross bred with any other Bharatiya (Indian) or foreign breed. Meticulous records are maintained and great care is taken to avoid in-breeding within the same lineage to preserve genetic integrity and diversity. Our Ghee comes from the GIR cow breed.

Vedic Gopalan:

We never sell or 'get rid of' older non-lactating Gaumatas or male calves. Her entire family is looked after as our own family. As a result, percentage of Gaumatas giving milk at our Gaushala at any point of time can be around 20% compared with 30-65% in conventional dairies.

We also strictly adhere to the ancient Bharatiya Vedic tradition of 'dohan', where the calf is allowed to feed to satisfaction from two 'Anchals', while the remaining two are used to obtain milk for humans. Each Gaumata has a name.

Gir Cow Ghee generally tends to be slightly yellow in colour, the same colour as “Ojas” (our essential energy that resides in the heart) that Maharshi Charaka described when he compared the colour of Ojas with the colour of Ghee. According to the Vedas, when Gaumatas are looked after well, they become 'santusht' (satisfied) and 'prasann' (happy). Ghee of such Gaumatas is truly 'kalyankari' (beneficial) and 'mangalkari' (auspicious). According to Maharshi Charaka, "Ghee promotes ‘sattva’ (Truth or Purity of Being), memory, intelligence, beauty, agni, fertility, digestion, and ojas.
